OKRA PILAU 
3 or 4 strips bacon, fried and broken
1 pt. okra, cut
1 c. rice
Salt and pepper to taste
1 c. water
Chopped onion (optional)

Fry bacon; add okra and cook until tender but not brown. Add rice, water, salt and pepper. Put in frying pan with lid then top with bacon and cook on low until dry, set until firm. Cooks about 1 1/2 hours.
