PARTY CHICKEN SALAD 
2 c. coarsely chopped chicken (use boneless, skinless chicken breasts cooked in microwave or boiled)
2 tbsp. lemon juice
1/2 tsp. salt
1 c. sliced celery
1 c. white grapes
1/4 c. slivered blanched almonds
2 hard-cooked eggs, chopped and chilled
1/2 c. mayonnaise

Sprinkle chicken with lemon juice and salt and chill for several hours. Add all other ingredients and toss lightly. Chill again, if desired. Serves 3-4 good size appetites and keeps well for several days.

Since microwave ovens vary in power, you may need to adjust your cooking time.
