SWEET POTATO CASSEROLE 
1 lg. can yams

Pour off all syrup except 1/4 of the amount in the can. Mash the yams and the syrup in a large bowl. Set aside.

Melt 1/2 stick of butter and cool. Add to the melted butter: 1/2 tsp. vanilla 1 beaten egg

Combine all ingredients listed above and place in a buttered 1 1/2 quart casserole baking dish.

GLAZE:

Melt 1/2 stick butter on stove and add small amounts of flour until runny like glaze icing. Add 1/2 cup of chopped pecans or walnuts to the glaze. Spread over the sweet potato mixture and bake at 350 degrees for 30 minutes.
