SAUSAGE-SPINACH SOUP | |
8 tbsp. butter 1 c. chopped onion 1/2 c. flour 21 oz. chicken broth or beef broth 1 lb. bulk sausage 2 pkgs. frozen chopped spinach (use raw) 1 pt. Half and Half 1/2 tsp. sugar 1/4 tsp. pepper 1/4 tsp. allspice Saute the onion in butter until it is transparent. Mix flour and broth (as in amount), make a roux to thicken. Add the broth. Simmer until it thickens - simmer sausage - drain the sausage well and crumble, thaw the spinach and squeeze out the excess liquid (but do not cook it). Add spinach to sauce. Add Half and Half cream. Add seasonings. Simmer 10 minutes, stirring constantly. This is a hearty soup - almost a meal in itself. |
