INSIDE-OUT RAVIOLI 
1 lb. ground beef
1/2 c. chopped red onion
1 clove garlic, minced
1 tbsp. plus 1/4 c. vegetable oil
1 (10 oz.) pkg. frozen chopped spinach
1 (16 oz.) can spaghetti sauce with mushrooms
1 (8 oz.) can tomato sauce
1 (6 oz.) can tomato paste
1/2 tsp. salt
Dash of pepper
1 (7 oz.) pkg. shell or elbow macaroni, cooked & drained
1 c. shredded sharp American cheese
1/2 c. soft bread crumbs
2 eggs, well beaten

Brown ground beef, onion and garlic; drain fat. Cook spinach and drain, reserving liquid. Add water to liquid to make one cup. Add liquid, spaghetti sauce, tomato sauce, tomato paste, salt and pepper to beef. Simmer 10 minutes.

Combine spinach, macaroni, cheese, bread crumbs, eggs, and 1/4 cup oil. Spread mixture in 13x9 inch baking dish. Top with meat sauce. Bake uncovered in preheated 350 degree oven, for 30 minutes. Let stand 10 minutes before cutting into squares.

Note: This can be made early in day and refrigerated until time to bake. Bring to room temperature before baking. Can also be frozen - just thaw prior to baking and bake for 45 minutes.
