INSIDE-OUT RAVIOLI 
1 lb. lean ground beef
1 med. onion, chopped
1 clove garlic, minced
1 tbsp. salad oil
10 oz. pkg. frozen chopped spinach
1/2 c. soft bread crumbs
2 eggs, well beaten
1/2 c. grated Italian cheese
1/4 c. olive oil
1 lb. can spaghetti sauce with mushrooms
8 oz. can tomato sauce
8 oz. pkg. macaroni or rigatoni, cooked
1 c. shredded sharp American cheese
1/2 tsp. salt
Dash of pepper

Brown beef, onion and garlic in 1 tablespoon salad oil. Cook spinach according to direction on package; drain liquid and reserve, adding water to measure 1 cup. Add to meat the spaghetti sauce, tomato sauce, reserve spinach liquid, salt and pepper and simmer for 10 minutes.

Cook rigatoni in boiling water until tender. Combine cooked rigatoni with olive oil. Then add spinach and remaining ingredients, except grated cheese. Spread rigatoni mixture in 13x9x2-inch baking dish. Top with meat sauce. Bake at 350 degrees for 30 minutes. Allow to stand for 10 minutes before serving. Sprinkle servings with grated cheese as desired. Serves 8.
