PIZZA CASSEROLE 
1 lb. lean ground beef
1/2 c. onions
1/2 c. green onions
1 c. V-8 juice or tomatoes
1/2 c. mushrooms
6-8 slices cheese (low fat)

Fry lean beef. Add onions, green peppers and mushrooms. Drain. Add V-8 juice and divide. Put half in a glass dish. Cover with cheese, then remaining beef. Cover with remaining cheese. Bake at 350 degrees for 30-45 minutes. Good to cut into square and freeze for microwave.

Since microwave ovens vary in power, you may need to adjust your cooking time.
