MEXICAN RICE (Arroz Mexicano) 
2 c. rice
1/4 onion, diced to taste
1/4 tsp. ground cumin
1/4 c. oil
4 c. water
1 tsp. chili powder
1/2 bell pepper, optional
8 oz. can tomato sauce
Salt & pepper to taste
1/2-1 stick celery, optional
1/2 tsp. garlic salt

In large skillet brown rice in oil. Add onions, tomato sauce and all other ingredients, simmer for about 1 minute at medium-high. Celery and bell pepper are optional and can be omitted. Add water, simmer about 15-20 minutes or until water is absorbed or until rice is tender. Can be served with tacos or with your favorite meat dish.
