SWEET CHEESE SQUARES 
1 container (8 oz.) cottage cheese
1 pkg. (3 oz.) cream cheese, softened
1/2 c. sugar
1/2 tsp. grated lemon rind
3 eggs, separated
2 c. cooked whole kasha
1/2 c. golden raisins
1/4 tsp. salt

Preheat oven to 375 degrees F.

Grease an 8 inch square baking pan and set aside.

In a large bowl, beat the cottage cheese, cream cheese, sugar and lemon rind until well combined. Beat in egg yolk. Stir in kasha and raisins.

In a grease free, medium size bowl, with clean beaters, beat egg whites with salt until stiff peaks form when beaters are lifted. Stir about 1/4 of the beaten whites into the cheese mixture. Fold in remaining whites. Spread batter into prepared pan.

Bake for 30 minutes, or until top is browned and a knife inserted in the center comes out clean. Cut into squares to serve.
