CARROT RAISIN BREAD | |
1 1/2 c. all-purpose flour 1 tsp. cinnamon 1 tsp. baking powder 1 tsp. baking soda 1 tsp. salt 1 c. vegetable oil 1 c. + 2 tbsp. sugar 3 eggs 1/4 c. molasses 1/2 tsp. vanilla extract 1 c. shredded carrot 1 c. raisins 3/4 c. chopped walnuts Preheat oven to 350°F. Combine flour, cinnamon, baking powder, baking soda and salt in a large mixing bowl. In another bowl, combine oil, sugar, eggs, molasses and vanilla with an electric mixer. Add shredded carrot and mix. Add raisins and walnuts and mix well by hand. Pour flour mixture into the other ingredients and stir until combined. Pour batter into two ungreased 8 inch loaf pans. Bake for 60 minutes, or until done. Yield: 2 loaves. |
