CARROT BREAD | |
1 1/2 c. whole wheat pastry flour 1 1/2 c. wheat germ 1 tbsp. cinnamon 1/2 c. chopped walnuts 1/2 tsp. grated orange rind 1 tbsp. baking powder 2 eggs, beaten 1/4 c. corn oil 1/4 c. honey 1/2 c. orange juice 1 1/2 c. shredded carrots Combine dry ingredients in a large mixing bowl. In another bowl, beat the eggs with the remaining ingredients. Stir the egg mixture into the dry ingredients and place batter in a lightly oiled 8 1/2 x 4 1/2 inch bread pan. Bake at 350 degrees for 50 or 60 minutes or until toothpick inserted into the bread comes out clean. |
