SAUSAGE GRITS 
1 lb. pork sausage
3 c. hot cooked grits
2 1/2 c. Cheddar cheese, shredded
3 tbsp. butter
3 eggs, beaten
1 1/2 c. milk

Cook sausage until brown, drain. Spoon lightly into greased 13 x 9 x 2 inch dish. Combine hot grits, cheese and butter. Stir until cheese and butter melt. Combine eggs and milk. Stir into grits. Pour over sausage in casserole. Bake at 350 degrees for 1 hour.

Can be made the night before and refrigerated and baked next day. 15 servings.
