SOUR CREAM ENCHILADAS | |
1 can olives, sliced 3 to 4 lbs. browned hamburger 2 lg. tubs sour cream 1/4 to 1/2 c. green chilies 1 sm. onion Jalapenos to taste (optional) 2 to 3 cans cream of chicken soup 4 c. grated Cheddar cheese 1 lg. can refried beans 2 pkgs. taco shells (flour or corn may be used) Mix all ingredients except (cheese and taco shells) in large bowl. Use a large spoon to ladle soup mixture onto a taco shell, roll the taco shell and place in pan. Continue until pan is full; spread mixture on top of shells. Sprinkle with cheese. Bake at 350 degrees until cheese just starts to turn golden, approximately 30 minutes. (Mixture is easily doubled or made more soupy by adding more sour cream and cream of chicken soup.) |
