SOUR CREAM ENCHILADAS 
1 lb. hamburger meat
1 1/2 pkg. taco mix
1 1/2 c. water
Tortillas

FILLING:

1 onion, chopped
1/4 stick butter
1 lb. jalapeno pepper Velveeta cheese
1 1/2 cartons sour cream

Brown meat; add taco mix and water. Simmer while preparing filling.

Melt cheese and butter. Add onion and sour cream; stir well and pour over tortillas filled with hamburger mixture or layer the tortillas and hamburger meat. Then pour the sauce over top. Bake until heated through. Serve with tossed salad.
