CYNDEE'S CHILI COLORADO | |
My family likes to add condiments such as sour cream, cheese, chopped tomatoes and guacamole. Many just like the meat with tortillas. Good no matter how you serve it! 4-5 lb. 7 bone chuck roast salt and pepper, to taste enough vegetable oil to cover bottom of a large skillet 3 cups water 4 cloves fresh garlic, peeled 3 whole large dried red California chili pods (remove stem) Cube roast. Salt and pepper and brown in oil in large skillet. Be sure to add the bone. Remember that's the good part! :) In a blender combine water, garlic and chili pods. Seeds and all! Blend until liquid. Pour over meat. Add more water if needed to cover meat. Simmer until tender, about 45 minutes to an hour. Serve with rice, beans and flour tortillas. Serves 6.
