CHICKEN STIR-FRY 
3 boneless, skinned chicken breast halves
1 med. onion, diced
1 green pepper, diced
1 c. carrot rounds
1 c. celery, diced
1 c. broccoli, cut sm.
1 c. fresh mushrooms, sliced (or 1 can)
3 tbsp. soy sauce (Kikkoman's lite)
1 tsp. powdered ginger
1 tbsp. liquid sweetener
2 tbsp. oil
Dash black pepper
2 c. water
1 c. rice

Bring water to boil, add rice, turn to low and cover (about 15 minutes). Prepare all vegetables. Slice chicken breast in very thin strips. Heat oil in very large skillet on high heat. Add vegetables and chicken, one at a time and stir constantly until all are just about tender. Add mushrooms last. Add ginger, pepper, soy sauce and sweetener. Serve over rice.
