EASY LASAGNE 
1 lb. ground beef
2 tbsp. oil
1/2 c. chopped onion
1 clove garlic, minced (or 1/4 tsp. garlic powder
2 (8 oz.) cans tomato sauce
1 tsp. crushed oregano
Salt to taste
1/4 tsp. pepper
8 oz. lasagna noodles, cooked and drained
12 oz. cottage cheese
8 oz. shredded Mozzarella cheese
Parmesan cheese

Brown meat in oil. Add onion and garlic and cook until tender. Add tomato sauce and seasonings. Cover and simmer 20 minutes. Place half of noodles in bottom of 9x13 baking dish. Spread half the cottage cheese. Top with half of the Mozzarella and half the meat sauce. Repeat layers. Sprinkle Parmesan on top. Bake at 350 degrees 45 minutes.

To make ahead - assemble, refrigerate. Allow 15 minutes longer for baking. Serves 6-8.
