YAM CAKE | |
1 1/4 c. cooking oil 2 c. sugar 2 c. flour 2 tsp. baking powder 1 tsp. baking soda 4 eggs 2 tsp. cinnamon 1 tsp. salt 3 c. grated raw yams 1 c. pecans, chopped Combine oil and sugar; mix well. Sift together remaining dry ingredients into sugar mixture. Add eggs one at a time. Add yams and mix well. Stir in pecans. Pour into lightly oiled 10-inch tube pan. Bake slow at 325 degrees for 1 hour 10 minutes. Cool in pan upright; turn out and glaze with either orange or lemon glaze. |
