PINEAPPLE MANDARIN CHICKEN 
1 1/2 lb. boneless chicken parts (skin removed)
1/4 c. canned crushed pineapple (unsweetened)
1 small orange, peeled and sectioned or 1 small can Mandarin oranges
1/4 c. orange juice (unsweetened)
1 tbsp. cornstarch
1 tbsp. plus 1 tsp. vegetable oil
1/4 c. soy sauce
1/2 tsp. dry mustard
1 tbsp. vinegar
1 tbsp. minced onion flakes
1/4 tsp. garlic powder

Preheat oven to 350°F. Place chicken in a baking dish that has been sprayed with a nonstick cooking spray. Spread crushed pineapple and orange sections evenly over chicken. In a small bowl, combine orange juice and cornstarch, stirring to dissolve cornstarch. Add remaining ingredients and pour over chicken. Cover and bake 1 hour.
