MANDARIN CHICKEN
1/2 c. flour
1 tsp. salt
1/4 tsp. pepper
1 cut up fryer chicken
1 can mandarin orange slices (11 oz.)
1/3 c. soy sauce
1/2 tsp. mace
1/4 c. brown sugar

Mix together 1/2 cup flour, 1 teaspoon salt and 1/4 teaspoon black pepper. Put flour mix in a bag and shake chicken until all pieces are coated. Brown chicken in oven (or cook few minutes in the microwave). Place chicken in a shallow baking dish that can be tightly covered.

Mix and pour over chicken juice from a can of mandarin oranges, 1/3 cup soy sauce, 1/4 cup brown sugar, 1/2 teaspoon mace. Bake chicken at 350 degrees 40 minutes, basting twice with sauce from pan.

Remove from oven. Baste with sauce and arrange orange slices over chicken. Bake for 20 more minutes. Serve with rice.

Since microwave ovens vary in power, you may need to adjust your cooking time.
