CHICKEN BREAST SCALA | |
3 whole chicken breast, skinned, boned, and halved 2 tbsp.flour 1 can beef consomme 1 tsp. salt 1 tbsp. Parmesan cheese 1/4 c. butter 1/2 c. sour cream 1/4 tsp. pepper Saute chicken until golden brown. Add consomme and simmer covered about 45 minutes. Stir in sour cream, salt and pepper. Simmer 10 minutes longer. Remove chicken to heat proof serving dish. Stir sauce to mix well, strain over chicken. If desired refrigerate chicken over night to improve flavor. Heat before serving. Sprinkle cheese over top. Put under broiler for a few minutes until golden brown. Serve at once. |
