GRILLED SALISBURY STEAK BELMONT 
1 3/4 lb. ground lean chuck
2 tbsp. grated onion
2 tbsp. green pepper
1 clove garlic chopped
1 1 2/tbsp. chopped chives
1 tbsp. chopped parsley
Salt and pepper
Paprika
Powdered thyme

Mix ingredients together. Shape meat into 6 small steaks 3/4-inch thick. Sprinkle with seasoned flour and brush with olive oil. Place on broiler rack 3- inches from flame. Broil 5 to 6 minutes.

SAUCE:

3 tbsp. butter
1/3 c. ketchup
1 tbsp. lemon juice
1 tsp. mustard
1 tsp. Worcestershire
Dash Tabasco
Salt and pepper
Dash of mace

Melt butter in saucepan and add remaining ingredients. Blend well and stir in 2 tbsp. sherry. Simmer (do not boil) for 10-15 minutes and pour over broiled meat.
