TURKEY BUFFET CASSEROLE 
1 pkg. herb-bread stuffing mix
1 stick butter
1 c. water
2 1/2 c. cooked (leftover) turkey, cut into bite size pieces
1/2 c. onion, chopped
1/4 c. green pepper, chopped
1/2 c. celery, chopped
1/2 c. mayonnaise
2 eggs
1 can cream of mushroom soup
Cheese, grated

Combine stuffing mix, butter and butter; mix well and put 1/2 into a buttered 12 x 8 inch baking dish. Combine turkey, onion, pepper, celery and mayonnaise and spread over stuffing mixture. Beat eggs, add to milk and pour over all. Cover with foil and refrigerate overnight. Remove from refrigerator one hour before baking and spread cream of mushroom soup over top. Bake uncovered at 350 degrees for 40 minutes. Sprinkle with grated cheese and bake additional 10 minutes.
