BEEF AND ONION SAUCE 
4 lbs. beef brisket
1 carrot, diced
1 sm. onion, diced
2 tsp. salt
4 whole black peppers
4 whole cloves
1 slightly beaten egg
1/2 c. dry bread crumbs
Onion sauce

Cover meat with boiling water; add vegetables and seasonings simmer 3 hours. Remove from liquid and place in shallow baking pan. Save 1 cup stock (or more) for onion sauce. Spread egg on meat and sprinkle with bread crumbs, brown at 400 degrees for 20 minutes.

ONION SAUCE:

2 tbsp. sugar
1 tbsp. oil or Crisco

Brown together then add:

2 med. onions, sliced thin

Cook until almost tender then add and brown:

1 tbsp. flour, add
1 c. brown stock from roast
1 tbsp. vinegar
Salt

Cook until smooth. Makes 2 cups.
