DANDELION SALAD 
Dandelion greens
4 thick slices bacon, cut in sm. pieces
1/4 c. butter
1/2 c. cream
2 eggs, beaten
1 tsp. salt
Pepper
Paprika
1 tbsp. sugar
1/4 c. vinegar

Wash and prepare dandelion as you would lettuce. Never use dandelion after it blooms, dry on cloth. Put greens in a bowl and set in a warm place. Fry bacon and put on greens. Put the butter and cream in a skillet and warm over low heat.

Mix beaten eggs, salt, pepper, paprika, sugar and vinegar. Stir into warm cream mixture. Cook until thickens and pour over greens. Toss gently and serve at once. Makes about 1 cup dressing.
