WILTED LETTUCE OR DANDELION
GREENS
 
1/2 lb. lettuce or greens
3/4 c. cream
3 eggs, beaten
1/2 c. vinegar
1 tsp. paprika
1/4 lb. bacon
1 thin sliced onion
1 tbsp. sugar
1 tsp. salt

Wash greens, drain and place in salad bowl. Slice onion over greens. Fry bacon until crisp and crumble. Reserve 3 tablespoons bacon fat in fry pan. Add cream and stir. Beat eggs, sugar, vinegar, salt and paprika together. Add egg mixture to bacon mixture and cook over low heat, stirring constantly. When hot, pour over greens and serve at once.
