DANDELION JELLY 
1 qt. fresh dandelion blossoms
2 qts. water
2 tbsp. lemon juice
1 (1 3/4 oz.) pkg. powdered fruit pectin
5 1/2 c. sugar

Rinse blossoms well in cold water, remove green collar. In an enameled or stainless steel pan boil dandelion petals in water 3 minutes. Save 3 cups of liquid, add lemon juice and pectin. Bring to a boil. Add sugar, stir well. Stir and boil 2 1/2 minutes. Pour into glasses and seal. (Be sure to drain liquid from petals, as you want clear liquid.)
