GREEN TOMATO RELISH | |
3 qts. chopped green tomatoes 1 qt. chopped onions 3 sweet red peppers, chopped 1/2 c. salt 7 c. sugar 1 tbsp. mustard seed 1 tbsp. celery seed 1 qt. vinegar Grind vegetables and put in a glass or plastic (non-metallic) container. Add salt. Allow mixture to stand overnight. Next day drain vegetables. Add sugar, seeds and vinegar. Boil 30 minutes and seal hot in sterilized jars. Note: Mixture may be boiled in aluminum or steel kettle. |
