EGGPLANT PARMESAN 
Eggplant
Tomato sauce
Parmesan cheese
Egg
Flour

Slice eggplant, dip in egg batter then in flour. Brown in frying pan just lightly; then layer in a baking dish and cover each layer with cooked tomato sauce. Sprinkle with Parmesan cheese and bake 30-35 minutes in 350 degree oven.
