SPRITZ COOKIES 
1 c. butter
3/4 c. sugar
2 egg yolks
1/4 tsp. almond extract
2 1/2 c. sifted flour
Food coloring
Cookie press

Start oven, set at 425 degrees. Have cookie sheets ready, but do not grease them. Beat butter thoroughly. Add sugar gradually. Mix well after each addition. Add egg yolks; mix well. Add the flavoring, then flour and beat thoroughly. Put food color in if desired. Put dough in cookie press and force dough onto cookie sheet, in shape desired.

Place about 1 inch apart. Bake 8 minutes. Remove cookie immediately from cookie sheet. Let cool and store in airtight container. If cookie sticks to pan, return to oven for 1 minute and remove immediately.
