SPRITZ COOKIES 
1 c. shortening
3/4 c. sugar
1 egg
2 tsp. lemon extract
2 1/4 c. flour
1/4 tsp. salt
1/2 tsp. baking powder

Cream shortening and sugar, add egg and extract. Gradually add dry ingredients. Roll in 1/2 teaspoon size balls (spread so don't worry about being too small). Make hole in each with little finger and fill with jam, green or red cherry bits or nuts or press with fork. Bake at 350 degrees for 8 to 10 minutes.
