DRIED BEAN SALAD 
1 (12 oz.) pkg. "ten plus" assorted dried beans
1 qt. water
1 chopped onion
1 pkg. chicken flavor instant broth and seasoning
1/2 tsp. celery salt
1/4 tsp. garlic powder
1/2 c. sliced green olives
1/4 c. sliced green onion

Cover beans with water and 2 tbsp. salt. Soak overnight, rinse and drain. In saucepan combine beans, 1 quart water, onion and seasonings. Bring to a boil and simmer until tender, about 1/2 hour. Drain and when cooled add green olives and green onion. Toss with dressing and chill.

DRESSING:

1/4 c. vinegar
1/2 c. oil
2 tbsp. chopped parsley
1 tbsp. minced fresh oregano or to taste
1 tbsp. minced fresh basil or to taste
1/2 tsp. salt
Fresh ground pepper to taste

Combine ingredients and mix vigorously. Pour over beans and mix well.
