CHICKEN DRESSING | |
Boil 1 fat hen seasoned with salt and pepper. EGG BREAD: 2 eggs 2 c. milk 1 1/2 tsp. baking powder 2 c. self-rising meal 4 tbsp. shortening 5 or 6 boiled eggs, finely chopped 8 slices bread, toasted 1/4 lb. saltine crackers 1 c. chopped onion 1/2 tsp. pepper 1 1/4 c. chopped celery Mix thoroughly eggs, milk, meal, baking powder and melted shortening. Pour into greased skillets and bake in oven at 425 about 20 minutes. Boil onion and celery together until tender. Crumble egg bread, bread and crackers and pour hot stock from boiled hen and mix thoroughly. Add cooked onion and celery, pepper and boiled eggs. Mix well. Pour into greased pans and bake in oven at 450 until the desired brownness. 20 to 25 servings. |
