CHICKEN LOAF OR RING | |
2 c. scalded milk 2 eggs, beaten 1 c. soft bread crumbs 1/2 tsp. salt 1/4 tsp. paprika 1 tsp. Worcestershire sauce 3 c. diced cooked chicken 1/2 c. chopped celery 1 green pepper, chopped 1 1/2 tbsp. lemon juice Pour hot milk slowly in a thin stream onto eggs, stirring constantly. Add remaining ingredients and mix well. Pour into buttered loaf pan or ring mold. Bake at 300 degrees until knife inserted in center comes out clean, 45-60 minutes, approximately. The ring will cook in less time than the loaf. Don't overbake. Remove from oven and let stand 10 minutes before unmolding. Good cold or hot. Fill a hot chicken ring with rice or macaroni, a cold ring with fresh salad. Serves 6-8. |
