1 lb. ground beef
1 med. onion
1/2 c. cracker crumbs
1 egg
Salt and pepper
8 med. potatoes
1/2 c. Parmesan cheese
3 tbsp. butter
1/4 c. milk
Velveeta cheese

Saute onion. Mix hamburger, onion, cracker crumbs, egg, salt and pepper. Put in loaf pan. Bake at 350 degrees for 40 minutes.

Boil potatoes, drain. mash with Parmesan cheese, butter, milk. Spread potatoes over meat loaf. Top with thin layer of Velveeta cheese. Bake until cheese is melted, about 5 minutes. Serves 4-6.
