CLASS #5 SHRIMP SCAMPI | |
1/4 lb. sweet butter 1 tbsp. chopped shallots 2 cloves minced garlic 1/4 c. dry white wine or lemon juice Melt butter. Quickly saute shallots and garlic. Add wine or lemon juice. Place shrimp in an individual baking dish. Pour sauce over shrimp. Sprinkle with salt and pepper and place in a very hot oven (500 degrees) for a few minutes until the shrimp turn pink. Put under broiler until piping hot. Sprinkle with paprika and minced parsley. |
