SPINACH SPECIAL 
1 pkg. frozen, chopped spinach, defrosted and well drained
1 clove garlic, very finely minced
1 med. onion, chopped
Olive oil
1 1/2 lbs. lean ground beef
1/2 tsp. crushed oregano
Dash nutmeg
Salt and pepper to taste
1/2 lb. mushrooms, sliced
4 to 5 eggs, beaten

Defrost the chopped spinach. Drain thoroughly, squeeze out all excess moisture; set aside. Saute the garlic and onion in a very small amount of olive oil. Add the ground beef and cook until crumbly. Add seasonings and spinach. Mix thoroughly and cook approximately 8 to 10 minutes.

Saute the mushrooms separately in 1 tablespoon of olive oil; add to the meat and spinach mixture. Add beaten eggs and work rapidly, stirring until the eggs are just set and the entire mixture is well blended. Serve immediately. Do not overcook. Serves 4 to 6.
