ENCHILADA SUIZA 
3 c. shredded cooked chicken
1 can chopped green chilies
Salt & pepper to taste

Soften 1 dozen corn tortillas. Roll chicken in tortillas and set aside in a 9"x13" cake pan.

Melt 1 stick of the butter in a large saucepan. Add 3 tablespoons flour and stir until smooth. Add 2 cups of milk and 1 small box Velveeta cheese. Heat and stir until cheese is melted and starts to thicken. Add green chilies. Pour sauce over tortillas, top with grated longhorn cheese. Cook in 350 degree oven for 20 minutes or until cheese melts.
