GINGERED FRUIT COMPOTE 
1 tbsp. cornstarch
1 tbsp. sugar
1/8 tsp. ground ginger
1 c. pineapple juice or orange juice
1 c. fresh blueberries
1 1/2 c. fresh strawberries
1 1/2 c. fresh pineapple chunks
1 c. sliced peaches

Combine first 3 ingredients in a small saucepan; gradually add pineapple juice, stirring until smooth. Bring mixture to a boil over medium heat; boil 1 minute, stirring constantly. Remove from heat and cool. Pour sauce over fruit, toss gently. Chill. Yield: 8 servings.
