STUFFED FLANK STEAK | |
1 to 1 1/2 lb. flank steak 1 c. jack cheese, shredded 1 c. mushrooms, sliced and sauteed 3 tbsp. green olives, chopped Pinch of oregano Butter 1 egg, possibly 2 1/2 c. fine bread crumbs Salt Pepper Garlic powder Flour White wine Combine cheese, mushrooms, parsley, oregano, olives, egg, and bread crumbs. If too dry, add an additional egg. Spread steak out. Sprinkle salt, pepper, and garlic powder lightly. Put stuffing on top of the steak. Fold over and seal edges with toothpicks. Sprinkle the outside with salt, pepper, and garlic powder. Sprinkle with flour. Brown on all sides in butter over medium heat. Place meat in a casserole. Dab with butter. De-glaze browning pan with a little wine or water. Pour over meat. Also pour 1/3 cup white wine over the top of the meat. Bake at 350 degrees for about 1 hour, covered. |
