SAUERKRAUT CHICKEN 
4 whole chicken breasts, halved & boned
1/4 tsp. salt
1/8 tsp. pepper
16 oz. can sauerkraut, drained (press out excess juice)
4 slices, 4 x 5 natural Swiss cheese
1 1/4 c. bottle Thousand Island dressing
1 tbsp. parsley

In a greased baking pan place chicken. Sprinkle with salt and pepper. Place sauerkraut over chicken. Top with Swiss cheese. Pour dressing evenly over cheese. Cover with foil. Bake an hour and a half or until chicken is fork tender. Sprinkle on chopped parsley when done.
