DIJON MUSTARD CHICKEN 
1/4 c. Dijon mustard
2 tbsp. minced onion
1/4 tsp. tarragon
1/8 tsp. Tabasco sauce
5 tbsp. melted butter
4 pieces chicken (white meat is best)
3/4 c. bread crumbs

Blend mustard, onion, tarragon, Tabasco sauce and 1 tablespoon butter. Coat chicken with mixture then dip each piece in bread crumbs. Place in baking pan. Drizzle remaining butter over chicken. Bake at 375 degrees for 1 hour. 4 servings.
