JOHN'S POOR MAN FILETS 
5 slices bacon, partially cooked remaining limp
1 lb. ground chuck or round
Lemon pepper
1 (2 oz.) can mushrooms, drained
Salt
2 tbsp. chopped green olives or black olives
Toothpicks
1 c. shredded Mozzarella cheese
1/4 c. grated Parmesan cheese
1 tbsp. chopped onion

Pat out ground meat on wax paper forming a rectangle about 1/4 inch thick. Sprinkle meat with salt and lemon pepper to taste. Sprinkle with grated Parmesan cheese, mushrooms, onions, olives and Mozzarella cheese. Roll tightly like a jelly roll. Cut slices about 1 1/4 inch thick and wrap bacon around edge and secure with toothpicks. Grill about 6 to 8 minutes on each side. Makes 5-6 filets.
