SHRIMP MARSALA 
2 lbs. shrimp, deveined
2 tbsp. olive oil
6 tbsp. chopped scallions
6 tbsp. chopped onions
Pinch of chopped garlic
Pinch of rosemary
1 c. Brown Sauce
1/4 c. Marsala wine
Salt and pepper to taste

Devein shrimp; split down the back without separating the halves; heat olive oil; add shrimp, scallions, chopped onions, garlic and rosemary. Cook over high heat until pink. Add 1 cup Brown Sauce and 1/4 cup Marsala wine. Simmer 10 minutes; salt and pepper to taste.

Brown Sauce: Combine 1 tablespoon butter and 1/2 tablespoon flour. Make about the color of brown paper. Add 2 cups of stock. Cook 5 minutes, stirring constantly. Lower heat and simmer 30 minutes. Strain if necessary.
