SZECHUAN CHICKEN | |
2 whole chicken breasts 3 tbsp. cornstarch 1 tbsp. salad oil 3 cloves garlic, minced 3 tbsp. soy sauce 3 tbsp. white wine vinegar (or white wine) 1 tbsp. sugar 1/4 c. water 1 sprig scallions, cut in 1 inch pieces Cut chicken into 1 inch cubes. Toss chicken in cornstarch to coat. Heat oil in large skillet, add chicken and minced garlic. Stir fry until lightly browned. Add soy sauce, wine vinegar, sugar and water. Cover and cook 5 minutes or until cooked through. Uncover, add scallions and cook 2 minutes longer. Serve with rice and green vegetables. |
