CREAMY LOW CALORIE RICE PUDDING 
1 (4 oz. size) pkg. Jello sugar free vanilla pudding
3 c. lowfat milk
1/2 to 3/4 c. rice (original Minute rice)
1/8 tsp. cinnamon
1/8 tsp. nutmeg

Combine all ingredients in a saucepan. Bring to ab iol over medium heat, stirring constantly. Pour into a 1 quart casserole. Place plastic wrap directly over while hot pudding. Chill 30 minutes. Remove plastic wrap. Sprinkle with cinnamon. Serves 8.
