RICE POPOVERS 
2 level c. cold boiled rice
2 level c. flour
2 tsp. baking powder
2 tbsp. sugar
2 eggs, separated
2 c. milk
1 tsp. salt

Mash rice until smooth. Sift flour, baking powder, salt and sugar together 2 times. Beat egg yolks, add whites that are beaten to a stiff froth, and stir them into the rice. Add milk and flour alternately and beat until smooth. Grease gem pans and flour lightly. Fill each 2/3 full and bake in hot oven for 15 minutes. Serve hot with butter or syrup, also as a dessert with fruit. Makes 20 popovers.
