SOUTHERN FRIED CHICKEN 
2 frying chickens (2 1/2-3 lb.) cut in serving pieces
2/3 c. vegetable oil
2 c. cheese cracker crumbs
2 tsp. salt
1/4 tsp. pepper
1 tsp. paprika

Combine cracker crumbs, salt, pepper and paprika. Dip chicken pieces into oil; then dip into seasoned cracker crumbs. Bake on ungreased baking sheet in moderate oven (375 degrees) for 1 hour.
