SPANISH RICE CHOPS 
1/2 c. uncooked rice
1 tbsp. fat
1/4 c. onion, chopped
4 pork chops
2 c. tomato juice
Salt to taste

Lightly brown rice and onion in fat in skillet. Push to one side and brown chops in same skillet. Add tomato juice and salt. Cook slowly for 1 hour. Then remove cover and cook 5 minutes to fluff rice.
