ELEGANT BANANAS FOSTER 
1/2 c. butter
1 1/2 c. brown sugar (firmly packed)
4 med. bananas, ripe and sliced
1/4 c. rum
1 to 2 tbsp. extract
Dash cinnamon
Vanilla ice cream

Melt butter in large skillet; add brown sugar and cook over medium heat until bubbly. Add bananas and heat 2 to 3 minutes, basting constantly. Stir in banana extract and cinnamon. Pour rum in a small saucepan and heat until warm. Ignite rum with long match and pour over banana mixture. Baste bananas until flame dies down. Serve at once over ice cream.
